Breaking the Detox - Day 6

For this day, I've decided to have wild fillet of salmon on a bed of kale sauteed with garlic.

Its been a hectic day, so I head out to Shelburne Farms to do a hike on my own -- fresh air and no kids ... bliss for a few moments... To cut a long story short, I decide to do a full hike (I met someone I knew who said it would only take an hour). I ended up missing a turn, and speed walking a 5 mile hike - the speed was needed as it was nearly dark. I didn't want to end up wandering around the 1000+ acre farm after dark!!

Anyway, I made it home as it was getting dark, and settled into my salmon dinner with a glass of reserve sparkling water with lemon.

Just to think, only a few weeks ago, I'd probably have had a 1/2 bottle of wine with that. And while I might have been smiling then, I know now that I'm OK without it.....

Breaking the Detox - Day 5

OK, I know I'm a sad person, but I've been really looking forward to dinner tonight! I've decided that my first protein meal will be 13 bean vegetarian chili! Its all cooked and waiting for me when I get home from work......

......and its even more delicious than I though. I have a small spoon of rice - that's all I need - with the vegetarian chili, topped with some chopped avocados, and I'm in 7th heaven!

More good news is that I'm not putting on any weight...I'm still fluctuating around the 120- 121 mark. Not bad....

Breaking the Detox - Day 4

Today I get to add in flax oil......yes!!!! I add it into my juice as its not noticeable there.

I have to say that my body is reacting a bit to food. Its not as easy as I thought to get back into a regular diet. I'm feeling a bit off, hopefully that will pass in a day or two.

I am still trying to get some daily exercise as I know my body is now getting more calories than its used to so I want to make sure I'm burning it off. I'd be more than gutted if I put on the 15 lbs in the first few days of breaking the detox !!!!

Breaking the Detox - Day 3

Today, my new food choice is oatmeal for breakfast. I make it with water - which I know a lot of people do anyway but at home in Ireland, its always made with milk. I used to look at people making oatmeal with water and wonder how they ate it..... But today it tasted great!

I have a small salad and fruit like I did yesterday, along with lots of detox tea, water and my live veggie juice. With all of that, I don't need the green drinks. I'm not sad to see the end of my green drinks.....my veggie juice tastes much better than the powder drinks.

Breaking the Detox - Day 2

On Day 2 I'm allowed to add a small cup of fruit...yipee!!!

I'm having a cup of melon with grapes. I also have a salad for lunch, without dressing again, and today I manage to eat it in less than 3 hours ;-)

I'm cutting back on my green drink supplement, but still have a live veggie juice in the morning.

Feeling full & happy again today ;-)

Breaking the Detox - Day 1

Its my first day after the detox and I'm being careful to bring all of my supplements, green drinks, and live juice with me to work. I weighted myself this morning and I've lost a total of 15 lbs. I'm ecstatic, but I am sensible enough to know that I'll probably put on a few pounds when I start to eat again and will probably end up around my original target weight.

Today I can have a cup of salad - so I make up some spinach, peppers, cucumber, celery and tomato. I can't have any dressing - which is tough for me as I used to load up on dressing. However, I'm really surprised when it comes to lunchtime. It takes me 3 hours to finish the salad. I find myself chewing everything for 5 times as long as I would have before the detox. And the taste of all of the food is out of this world! Its hard to describe, but I don't miss the dressing at all, in fact, based on the fact that I can now taste every item on my plate, I'm wondering if I will every have salad dressing again....

I'm pretty careful in sticking to the recommended way to break the detox, and given that its taken me so long to eat the basic salad, its easy for me to just have soup for dinner, although I have to say that the salad has made me feel pretty full ;-)

Juice of the Day

Carrot, Apple & Ginger

You will need: 1 apple, 3-4 carrots, and a slice of ginger.

Juice the apple and carrots and ginger slice in the juicer. Serve immediately!

Delicious!

This is a juice that I use as a baseline for other juices. To add more "power" try adding the following ingredients:

- Stick of Celery
- Handful of Alfalfa sprouts
- Some kale, spinach, other leafy greens


Soup of the Day - the healthy way!

Butternut Squash & Orange Juice

Split a butternut squash down the middle, and scoop out the seeds and set aside. Wash & dry and place on a baking tray. Place a tablespoon of orange juice in the cavity. Cover with foil and bake in a 375 deg. oven for about 45 mins - 1 hr. Test the flesh with a fork - when its soft, its done! Meanwhile, while the squash is cooking, wash the seeds, removing fibers of flesh, and place on a baking tray to dry. Remove baked squash from the oven and allow to cool. Pour the OJ into a blender, and scoop out all of the flesh into the blender, discarding the skins. Puree the squash, and then pour into a saucepan. Add about 6 cups of distilled or spring water (do not use tap water, as it contains chlorine etc which defeats your healthy mission). Bring to the boil and its ready to eat!

When the seeds have dried, bake them in the oven for 30 mins until roasted. Sprinkle on top of the soup and serve.
